What is causing “gluten intolerance” and celiac’s?
Wheat is one of the most common ingredients used in the entire world, mainly used in breads and other baked goods. But most people don’t realize there are over 25,000 varieties of wheat in the world, and there are 6 general classes that are grown in the United States commercially. With 3 having key differences being soft, hard, and durum wheat. Soft wheat is what is most commonly grown in Europe and is used mainly for baked goods that aren’t bread, such as pastries or cookies, soft wheat has lower content of gluten. Hard wheat are the varieties typically used for breads and contain a higher gluten content. Durum wheat is higher gluten and is typically used for pasta and couscous.
I’ve talked to tons of people that either have celiac’s or are gluten intolerant, and I hear the same things repeatedly. One is that they are able to go overseas to Europe and eat all the pasta and bread they want without issues, which shouldn’t be possible if what the medical establishment tells us is true about gluten. Also that they can eat organic ancient grains (spelt, einkorn, etc) and not have symptoms at all. Spelt and einkorn do have less gluten than regular wheat, but the structure of the gluten itself is also different as they are not hybridized like modern wheat. Making sourdough bread using a grain like organic spelt is way better for you, and also tastes way better too! There are some people that are gluten-intolerant that say they can eat regular wheat if it is organic and made into sourdough bread, which begs the question of what the real issue is.
Some key differences with European wheat is that they mainly grow soft wheat, which has less gluten, and glyphosate is outlawed in Europe. These 2 factors alone make a massive difference on the effects of the wheat on the human body, let alone all the other toxic ingredients that get added to American bread and wheat products. The fact that the most widely used pesticide in the US is illegal in other parts of the world should tell you how bad it is. Europe also just doesn’t use the same strains of wheat as we do in the US, whether it be soft or hard wheat.
This information opens the door to question what “gluten-intolerance” and Celiac’s disease actually are. It isn’t that gluten-intolerant people can never consume gluten, and people with Celiac’s can still have wheat without having reactions. It just seems to be when people consume our conventionally grown American wheat that people tend to have reactions. Recent estimates state that around 1% of the world’s population as having celiac’s, but this is slightly higher in the United States. Celiac’s is considered an autoimmune issue Non-celiac gluten sensitivity (NCGS) is estimated to affect up to 6% of the United States population, which is a much higher rate than Celiac’s.
Did you know that there are many of our common foods that are sprayed right before harvest, simply to make harvesting easier? Wheat, oats, rapeseed (canola), flax, peas, lentils, soybeans, and sugar cane are all sprayed with glyphosate right before harvest. This is happening at the large scale farm level because some of these farms are so massive if they don’t make harvesting easier it becomes a massive pain to harvest and process. Essentially the reasoning is that it dries out the plants and makes it easier to process all the harvest at the same time, that is literally the reason for doing it. So people are eating this food that is sprayed RIGHT before harvest with one of the harshest chemicals out there, and the medical establishment just blames the plants and not the chemicals? I mean we really should not be surprised, this is par for the course for our medical system today.
The problem when you look into these issues by simply googling it, you find little information relating the actual varieties of wheat and the glyphosate to these health issues. Also a lot of people have been funneled into eating “gluten-free” foods, which has become a $17 billion market which is just causing other health problems the longer people are on conventional gluten-free foods. While a gluten-free diet can certainly be beneficial for people that have celiac’s or “gluten intolerance”, people without those ailments should not be eating a gluten free diet. Many gluten-free foods found on store shelves are loaded with other sugars or flours with no nutritional value, like bran-less rice. It is certainly possible to do a gluten-free diet right by consuming a balance of fruits, vegetables, meats, and seeds and nuts, most people just choose to still eat gluten-free breads or sugary pastries though, which does not help.
So let’s focus more on glyphosate, what it is and the effects on the body. “Glyphosate, the active ingredient in many herbicides, has been associated with various health effects, including neurological impairments and potential carcinogenic risks. Studies have shown that glyphosate exposure may be linked to cognitive function decline, depressive symptoms, and neurological medical conditions in adults, with significant negative associations found between urinary glyphosate levels and cognitive function tests.” So by this, it has become known that glyposate causes cognitive decline, causes cancer, and even depression.
Another study linked here https://pmc.ncbi.nlm.nih.gov/articles/PMC9145961/ shows that glyphosate has a large impact on the gut microbiome, killing off many beneficial bacteria. There is also evidence that glyphosate plays a major role in causing what is called “leaky gut.” Leaky gut is essentially where there becomes perforations in the intestinal lining to the point where fecal matter escapes and seeps into the body. I shouldn’t have to explain why this is a major problem, and is much more common than you may think.

More and more people are becoming aware of the major problem that is glyphosate, but its becoming almost impossible to avoid as well. that’s just insane. This chemical doesn’t just stay in the ground where it was sprayed, it runs off into rivers, lakes, streams, oceans, and even evaporates and has been found in rain water all over the world. So to avoid glyphosate completely, you have to be growing your own food, have your soil tested, and most likely just grow food indoors. Even then, you’d have to test your water, test the soil you’re using indoors (or just the water if hydroponic) and ensure the seeds you got are clean as well. Now I don’t have much information on it, but apparently there are specific batches of enzymes that you can bloom and spread in the soil that will break down the glyphosate in the soil. I am still learning more about that myself, and hopefully will have more information on that in the future.
So many of our health problems in America today can be traced back to Monsanto, the inventors of Round-up, of which the main ingredient is glyphosate. Monsanto also created agent orange during Vietnam which devastated that country and anyone who handled it. Monsanto is also well know for creating many GMO foods. Monsanto specifically splices glyphosate into their seeds to produce “glyphosate resistant seeds.” Essentially this creates plants that are resistant to glyphosate so that they can be sprayed as much as needed on the plants and all around them to kill everything except the plants. The good bulk of GMO crops grown today are these types of seeds, and the biggest reason why GMO crops are to be avoided at all costs. Genetically modifying crops also enables Monsanto to patent them, as legally you cannot patent nature, unless it is modified to the point where it becomes something else. Most corn, soy, canola, and cotton are genetically modified in this way today, and are some of the most widely grown crops in the world. Monsanto is also owned by Bayer now, so Bayer is causing the health problems with the chemicals, and trying to sell you the treatments when your health goes down, it’s absolutely sick and evil.
So in conclusion, we seem to have a decent understanding on what is actually causing these health issues in today’s world. Hybridized/ GMO crops are a part, on top of them being sprayed with chemicals like glyphosate, I didn’t even get into the many other chemicals that are used growing these crops, glyphosate is just by far the biggest one. If you are someone that either is “gluten intolerant” or have celiac’s, then you should certainly be avoiding conventional wheat, and most conventional non-organic foods in general until your gut heals. You also should make gut health a major priority with things like quality probiotics, gut detoxes, and colon hydrotherapy. Get the gut as clean as possible, and start adding quality probiotics in to build that microbiome back and fortify the walls of the intestines as well. Stick with local grown organic produce, grow your own foods like sprouts and microgreens, and move to organic ancient grains like spelt and einkorn for breads or baked goods. The most important thing is to not get stressed and afraid about these issues, but to focus on solutions and what you can do to minimize the impact with your family, and those around you as well.
